Grass-fed beef, rotationally grazed on our certified organic pastures
Starting in 2019, we have been buying what’s called “stocker cattle,” which are young cattle, old enough to be weaned from their mothers, which we then feed until they reach market size. In our case, we are feeding them only on our certified organic pastures and on certified organic hay cut from our pastures, because we think that grass-fed beef is better for the eater as well as the planet. Grass-fed beef tends to be less fatty than corn-fed, as well as more flavorful because the animals take longer to reach market size. Grazing pasture land is very beneficial for the soil, causing the grasses and other pasture plants to grow more in response to being grazed, which increases the biological activity as well as the carbon uptake. Our very hilly farm has many acres that are not suitable for being tilled up to plant grains or vegetables, but they are perfect for four-legged animals to walk around on, and for grasses and other perennial plants to grow.
You can get beef from us in one of two ways:
by the piece at our self-serve on-farm store. Pick up a steak or a pound of burger for your weeknight meals, or short ribs or a roast for a special meal. Prices start at $11/lb for ground beef.
in bulk, via pre-order, for fall pick up. Get an assortment of cuts to stock the freezer for the rest of the year. 1/8th of a cow should get you about 35 lbs of beef of assorted cuts, including ground beef, steaks, and roasts. $9/lb cut and packaged. You’ll have to own a chest freezer to fit, as this would likely entirely fill the small freezer attached to a fridge. Pick up is generally in November or December of each year. We tell you the full price per pound up front, rather than charging you a low price for the "hanging weight" of the beef (which includes bones and off-cuts you never receive) and also passing along the processing fees which give you a shock when you get the final bill.
